Looks yummy, but I don’t like to use oil. Is it possible to just leave it out, or will the food become dry/not crispy?

What about letting the tofu marinade say over night rather than applying the marinade every 5 minutes? Would that work?
yes exactly; if i can plan ahead i prefer doing less actual work that way 🙂 Having lots of tofu lately and i usually just bake it as is. So your recipe is quite timely 🙂

One question.. I've always been told/under the impression that rice is dangerous to reheat or eat cold? What is a safe way to eat leftover rice?
What you say is correct, but it is just a part of the story. Rice ‘can’ contain Bacillus cereus, which ‘can’ survive when the rice is cooked. However, the rice itself is considered a low risk item because if you cook it properly, store it at appropriate temperatures soon after (as recommended in our video series on meal prep tips), and eat it within two days, the quantity of bacteria present cannot increase enough to give you food poisoning.
Pathogens are everywhere, so the goal is to prevent them from growing, rather than try to avoid them altogether, which is why it is not always easy to say if something is “low risk” or “high risk” with absolute certainty. Rice is a great example of how a food can be low risk and high risk at the same time, depending upon the way you treat it: It is super safe when dry, and it could potentially become high risk if not properly stored. That being said, Bacillus cereus bacteria symptoms are incredibly mild, and rarely last for more than 24 hours, which is another reason why many oranisatitons don’t consider rice “risky”. It should still be cooked thoroughly, never reheated more than once, and eaten within to days, like pretty much any other food. Thank you!

I absolutely LOVE the roasted vegetable recipe! I gave it a try, and it was great because I used whatever vegetables I had lying around. I ended up using potatoes, broccoli, and red pepper, and it was amazing! I can also think of SO many more vegetable combinations. Thanks for the recipes!
